Want to trick yourself or your kids into eating a bag full of spinach ? Its simple, take some basil, spinach, EVOO, Asiago Cheese, blend it up, pour over some wheat pasta, and voila' you have Popeye Pesto Pasta!
|The Starting Line-Up:|
One bundle of Fresh Basil; One Bag of Fresh Baby Spinach;
About a 2inch piece of Asiago Cheese; 1/4 cup of EVOO
Put all of the dry ingredients ( Basil, Spinach,& Cheese) into a food processor. Finely chop, then slowly add the EVOO until you have reached your desired thickness. The addition of the Asiago gives the pesto a creamy, nutty taste. You can also add some toasted pine nuts for an additional nuttiness.
|This is the final product. The Popeye Pesto is a GREAT way to get healthy greens into your diet without eating like a rabbit.|
I chose to pair my Popeye Pesto with some fresh sauteed shrimp and some whole what pasta.
|In a pan with a small amount of EVOO, I use a spray, Saute the shrimp until slightly pink.|
|To finish, toss the whole wheat pasta with the shrimp and Popeye Pesto. Serve, enjoy, and watch those muscles grow!!|
